About: Thomas Capretta, a Certified Executive Chef and Certified Culinary Educator, has been an instructor in the Hospitality Management program at Tri-C since 1998. He assisted in opening the hospitality department at Eastern Campus in 2009. Since then, Capretta has provided mentorship, support and development to new instructors at Tri-C and shared his enthusiasm for the culinary industry with his students.

He has received many awards, including the American Culinary Federation’s (ACF) President’s Award in 2005 and 2008; the ACF’s Educator of the Year award in 2003, 2014 and 2022; the August LoPresti Fellowship Award in 2002; and was named Chef of the Year in 2016 by the ACF Cleveland Chapter. Capretta currently serves as a board member and as the apprentice chair for the ACF Cleveland Chapter.

About: Paul Glatt has served as an assistant professor for the Hospitality Management program since 2002.

The Cleveland native has lived and worked in many places, including the New York/New Jersey area, Seattle, Tucson, Florida and Pennsylvania.

Glatt has been in the hospitality industry since he was 13, primarily in bars, nightclubs and restaurants. He also managed a hotel. After graduate school, he returned to Cleveland as the beverage manager at Cleveland Browns Stadium when it first reopened in 1999. He also worked as the bar/beverage manager at Severance Hall and Shooters on the Water when it was the busiest restaurant in the state. Plus, he briefly owned his own restaurant in downtown Cleveland.

He currently lives in southern Geauga County with his wife and two wonderful mutts.
